
Carrot Cookies

Here's how:

Preheat the oven to 225 °C.

Peel the carrots and grate them finely.

Pour the milk into a saucepan and heat it until it's lukewarm.

Measure out the flour into a bowl. Cut the butter into pieces and place them on top. Add the carrot, salt, honey, and the yeast (broken into small pieces), and finally the milk.

Knead the dough thoroughly, about 5 minutes in a mixer or 10 minutes by hand.

Let it rise under a kitchen towel for about 30 minutes.

Place the dough on a floured work surface and knead it until smooth. Then divide the dough into 2 portions and roll them out until they are about 1–2 cm thick.

Place them on baking sheets lined with parchment paper and let the buns rise under a kitchen towel for 20 minutes.

Bake them in the center of the oven for 10–12 minutes. Let them cool under a kitchen towel.

- 50 g (1 packet) KronJäst for Bread, fresh
- 300 g (4 carrots)
- 300–360 g (about 5–6 dl) all-purpose flour
- 300–360 g (about 5–6 dl) rye flour
- 50 g (0.5 dl) butter, at room temperature
- 6 g (1 tsp) salt
- 500 g (5 dl) milk
- 20 g (1 tbsp) honey
