Why doesn't fresh KronJäst always contain 50 g, as promised on the package?
This is because the yeast dries out during storage. Yeast contains water both inside and around the yeast cell, and during storage, this water evaporates. The packages may lose some weight, but the yeast’s activity remains intact.
