
Chocolate Wafers with Orange

Here's how:

Heat the milk to about 25 °C and dissolve the yeast in it.

Combine all the ingredients except the chocolate chips in a mixing bowl using a dough hook until the dough is smooth and elastic—about 10 minutes in a stand mixer or 20 minutes by hand. Add the chocolate chips during the last few minutes.

Let it rise for at least 30 minutes.

Divide the dough into 6 pieces and roll them out. Cover with a cloth and let rise for about 30 minutes.

Preheat the oven to 230 °C. Brush with a beaten egg and sprinkle with a little granulated sugar. Bake for about 12 minutes. Let them cool slightly. Cut the rolls into bite-sized pieces. Lower the oven temperature to about 150 °C and bake until golden brown, about 15 minutes. Open the oven door and let the cookies dry out in the residual heat.

- 50 g (1 packet) KronJäst for Sweet Doughs, fresh
- 250 g (2.5 dl) milk
- 500 g (about 8.3 dl) all-purpose flour
- 24 g (4 tbsp) cocoa
- 140 g (1 dl) white syrup
- 2 g (0.3 tsp) salt
- 100 g butter, at room temperature
- 3 g (1 tsp) ground cardamom
- 1 orange; grate the zest and squeeze out the juice
- 150 g (1 bag) Odense dark chocolate buttons
