    Feel free to assemble the cake a day in advance so that the sandwich cake stays moist. Decorate it the same day. In the photo, we’ve chosen to make half the cake with seafood flavorsand half vegetarian; this recipe is for a vegetarian sandwich cake.

    Here's how:

      Start by making the base for the sandwich cake. Once that's done, continue with the step-by-step instructions below.

      Cut the sandwich cake base into three layers. Spread hummus on the bottom layer and crumble the feta cheese finely over it.

      Place the next layer on top. Spread the artichoke cream on top. Sprinkle with sliced olives and top with a layer of pickled peppers.

      Place the top layer on the cake. Mix or whisk together the mayonnaise and cream cheese until smooth. Spread it over and around the entire cake. You can prepare this a day in advance; just store the cake in a cool place.

      Prepare the garnish. Wash and slice the beets as thinly as possible, preferably using a mandoline. Snap off the thick bottom part of the asparagus. Cut them in half lengthwise.

      Arrange sliced beets around the outer edge of the entire cake. Place a ring of olives inside, and finally, arrange the beetroot salad in the center.

      If desired, spread a little extra mayonnaise on the sides of the cake to act as “glue.” Arrange asparagus, chives, and, if desired, wood sorrel in a pattern around the entire cake. Place some mache salad at the bottom.

    Tip!

    If you're really good with your hands, you can cut the crust into four pieces—that way, there'll be more room for a creamy filling.

    Filling 1

    • 200 g hummus
    • 150 g feta cheese

    Filling 2

    • 300 g artichoke cream
    • 100 g (1 dl) olives, sliced
    • 150 g bell peppers, pickled, marinated 

    Topping

    • 200 g mayonnaise + a little extra, if needed, about 200 g
    • 100 g cream cheese

    Garnish

    • 200 g (2–3) Polish beets or yellow beets
    • 250 g (about 10 spears) green asparagus 
    • 200 g (1.5 dl) olives, pitted 
    • 2–3 dl mache salad
    • 20–30 g (1 pot) chives
    • possibly red oxalis
