    Pita bread is a round, flat, wheat-based bread made with yeast. It plays a major role in traditional cuisine in many countries, including Greece. However, its origins are believed to lie in ancient Syria. In the Western world, pita bread has become popular in recent years as an accompaniment to dishes such as falafel and kebabs.

    In this recipe, sourdough also adds a delightful tang to the bread.

    Here's how:

      Dissolve the yeast in the water.

      Mix all the ingredients except the salt for 3 minutes on low speed and 5 minutes on high speed. Double the time if you're kneading by hand.

      Add the salt and mix for another 2 minutes, quickly.

      Place the dough on a floured surface, knead it, and shape it into a round; return the dough to the bowl, cover it, and let it rest for 45 minutes.

      Preheat the oven to 275 °C and place a clean baking sheet (without parchment paper) in the upper part of the oven.

      Divide the dough into 15–20 pieces and shape them into balls. Let the pieces rest on a floured surface and cover them with a kitchen towel for 20 minutes.

      Roll out the pieces of dough into round discs, like a tea cookie. Place the pieces of dough on a floured surface or parchment paper.

      Place 3–4 dough discs at a time on the hot griddle and bake for about 3–4 minutes, keeping a close eye on them—they cook quickly.

      Remove the bread from the oven and let it cool on a wire rack, covered with a kitchen towel.
