Pita bread is a round, flat, wheat-based bread made with yeast. It plays a major role in traditional cuisine in many countries, including Greece. However, its origins are believed to lie in ancient Syria. In the Western world, pita bread has become popular in recent years as an accompaniment to dishes such as falafel and kebabs.

Dissolve the yeast in water at 25 °C, then add salt and flour. Knead into a smooth, elastic dough—3 minutes on low speed and 4 minutes on high speed in a mixer. Double that time if you’re kneading by hand.

Divide the dough into 10 equal portions and roll them into balls. Let them rise, covered, for about 30 minutes.

Roll out the buns to a diameter of 16 cm.

Place the rolls spaced apart on the baking sheet and bake at 245 °C until they're slightly browned and puffed up, about 10 minutes.
