
Gluten-Free Philadelphia Buns

Heat the milk to 20 °C, add the fiber husk, and let it sit for 10 minutes.

Mix the yeast with the milk. Add the room-temperature butter, sugar, salt, and almost all of the flour. Knead the dough until smooth, preferably in a mixer.

Use a baking sheet lined with parchment paper. Pour the batter onto the sheet and spread it out to the edges; the batter will be very sticky and runny, but that's how it's supposed to be.

Cover with a kitchen towel and let rise for 30 minutes. Meanwhile, mix together the ingredients for the filling.

Next, use your floured thumb to poke small holes evenly spaced across the dough. Fill each hole with the filling. Brush the surface with beaten egg and sprinkle with pearl sugar.

Bake at 200 °C for 15–20 minutes, or until it’s nicely browned. Cut into squares.

- 50 g (1 packet) KronJäst for Sweet Doughs, fresh
- 500 g (5 dl) milk
- 150 g butter, at room temperature
- 100 g (1 dl) granulated sugar
- 3 g (0.5 tsp) salt
- 600–720 g (about 10–12 dl) gluten-free flour mix
- 20 g (2 tbsp) psyllium husk
Filling
- 150 g (1.5 dl) butter, at room temperature
- 200 g (2 dl) Philadelphia cream cheese
- 180 g (3 dl) powdered sugar
- 30 g (2 tbsp) vanilla sugar
Brushing
- 1 egg, beaten
Garnish
- granulated sugar
