    An unexpected treat to enjoy with coffee, a glass of sherry, or sweet white wine. Perfect as an energy bar “on the go” or as a unique cookie for coffee break!

    Here's how:

      Crumble the yeast into a mixing bowl, then mix in all the ingredients except the dried fruit and seeds.

      Knead in a stand mixer for 5–6 minutes until the dough is sticky. Double that time if you’re kneading by hand. Then add the fruit and seeds and knead for another couple of minutes.

      Place the dough on a floured work surface, shape or roll it out into a rectangle about 10×30 cm. Brush with a little water and sprinkle with a little sea salt. Let it rest and rise for about 15 minutes. Preheat the oven to 170 °C.

      Bake for about 15 minutes, cut the dough into 0.5 cm sticks, and bake for another 10 minutes at 150 °C. Then open the oven door, turn off the oven, and let them sit to cool and dry further.

    Ingredients

    • 12.5 g (1/4 packet) KronJäst for Sweet Doughs, fresh
    • 160 g (2 dl) granulated sugar
    • 15 g (1 tbsp) organic vanilla sugar
    • 138 g – 165 g (about 2.5–3 dl) Laila's Light Gluten-Free Flour Mix
    • 100 g (2) eggs
    • 2 tbsp rosemary, finely chopped
    • 2 g (1/2 tsp) sea salt
    • 4 dl dried fruit, chopped
    • 150 g (2 dl) seeds, mixed to your liking

    You can also try mixing in some chopped nuts. It's extra delicious!
