
Whole-Wheat Sourdough Bread – Basic Recipe

A good sourdough loaf is just as perfect for a meal as it is for a snack. With a good base, you can bake it in any shape you like, and it freezes very well. Here are some suggestions for breads and baguettes. For those of you who want to learn more, check here for tips! Baking School.
Here's how:

Mix together the yeast, sourdough starter, and water. Then add the remaining ingredients, except for the salt.

Knead into a smooth dough: 2 minutes on low speed and 6 minutes on high speed in a mixer, or 20 minutes by hand. Add the salt at the end, during the last 2 minutes on high speed in the mixer. The dough should be loose, but not sticky.
Shape the dough into a smooth, even ball. Let it rise in an oiled bowl covered with plastic wrap for about 1 hour. -

Fold the edges of the dough toward the center, turn the dough over, and then let it rise for another hour.

Turn the dough out onto the table. Divide it into 2–3 pieces for loaves or 4 pieces for baguettes. Gently roll each piece into the desired shape.

Sprinkle a little flour over the loaves, place them on a baking sheet, and cover with plastic wrap. Let them rise for about 1 hour.

Preheat the oven to 260 °C.

Score the loaves just before you put them in the oven. Reduce the temperature to 230 °C.

Bake in the middle of the oven until the bread is nicely browned, 25–30 minutes, and then let it cool on a wire rack.

- 150 g (1 bag) KronJäst Whole-Grain Wheat Sourdough, fresh
- 500 g (5 dl) water, cold
- 750 g (about 12.5 dl) all-purpose flour
- 15 g (2.5 tsp) salt or sea salt
- 20 g (1.5 tbsp) olive or canola oil
