
Spanish country bread

Spanish country bread is a delicious bread that can be served—either torn into pieces or sliced—with the spicy dishes typical of Spanish cuisine. Or you can cut it into small pieces to use as a base for delicious Spanish tapas.
Here's how:

Mix the water, sourdough, yeast, and oil.

Stir in the dry ingredients.

Knead the dough vigorously in a mixer for about 6 minutes, or by hand for about 12 minutes. Cover with plastic wrap and let rise for 15 minutes.

Shape the dough into one large loaf or divide it into two smaller loaves.

Let the bread rise, covered with a kitchen towel, for about 45 minutes.

Preheat the oven to 240 °C and place a baking dish filled with water on the bottom rack of the oven.

Use a knife to score a checkerboard pattern into the bread just before placing it in the oven.

Preheat the oven to 200 °C and bake for about 45 minutes. Leave the pan of water in the oven while baking.

- 25 g (1/2 packet) KronJäst for Bread, fresh
- 150 g (1 bag) KronJäst Rye Sourdough
- 500 g (5 dl) water, lukewarm
- 26 g (2 tbsp) olive oil
- 420 g (about 7 dl) all-purpose flour
- 180 g (about 3 dl) graham flour
- 120 g (about 2 dl) durum wheat flour
- 12 g (2 tsp) salt
