
Sweet, Crispy Bagels

A favorite! If you like bagels with a slightly dense texture, you’ll love these. They’re wonderfully chewy and a little crunchy thanks to the poppy seeds, and then there’s the sweet crunch from the pearl sugar. “Wonderfully delicious” is just the beginning.
Here's how:

Dissolve the yeast in the water and add salt and honey.

Add the wheat flour a little at a time and knead the dough in the machine for about 10 minutes.

Let the dough rise in a bowl, covered with a kitchen towel, until it doubles in size, about 50 minutes.

Turn the dough out onto a floured work surface and knead it lightly. Divide the dough into 12 pieces.

Shape each piece into a round bun and use your index finger to press a fairly large hole in the center. Twist the ring so that it fits evenly around your finger, like a hula hoop.

Let the rolls rise under a baking cloth on a baking sheet lined with parchment paper for about 45 minutes.

Preheat the oven to 175 °C. Bring water to a boil in a large saucepan.

Cook a few rings at a time, 1–2 minutes on each side.

Let the rings dry on a kitchen towel, and then place them on a baking sheet lined with parchment paper.

Brush with beaten egg and roll them in blue poppy seeds mixed with pearl sugar. Bake the bread until golden brown in the middle of the oven for about 25 minutes.

- 25 g (1/2 packet) Kronjäst for Sweet Doughs, fresh
- 500 g (5 dl) water, lukewarm
- 17 g (1 tbsp) salt
- 80 g (4 tbsp) honey, liquid
- 720 g (about 12–13 dl) all-purpose flour
