
Shrimp sandwich on a delicious sourdough roll

Here, KronJäst has baked a soft and delicious sourdough tea cake that’s easy to make and tastes absolutely fantastic. It’s perfect with a shrimp sandwich or your favorite spread. The bread freezes very well.
Here's how:

Dissolve the yeast in the water.

Mix all the ingredients for 3 minutes on low speed and 4 minutes on high speed using a mixer. Double the time if you're kneading by hand.

Pour the dough onto a floured work surface and knead it briefly by hand, then return it to the bowl and let it rest for 30 minutes, covered with plastic wrap.

Divide the dough into 12 pieces, shape them into rounds, and let them rest on a floured table.

Take a round piece of dough and roll it out into a flat circle. Place it on a baking sheet lined with parchment paper and prick it with a fork.

Feel free to sprinkle a little durum wheat flour on the tea cakes before letting them rise.

Let the bread rise for 90–120 minutes, covered with a baking cloth or plastic wrap, at room temperature.

Bake the bread at 250 °C for about 5–6 minutes.

- 25 g (1/2 packet) KronJäst for Sweet Doughs, fresh
- 150 g (1 bag) KronJäst Whole-Grain Wheat Sourdough
- 250 g (about 2.5 dl) water, lukewarm
- 300 g (about 5 dl) all-purpose flour
- 230 g (about 3.5 dl) durum wheat flour
- 50 g (about 0.5 dl) granulated sugar
- 25 g butter
- 7.5 g (about 1 teaspoon) salt, heaping
- 25 g (about 2 tbsp) olive oil
