    Gingerbread rolls are wheat rolls baked with the classic spice blend used in gingerbread. They make delicious rolls with a festive Christmas feel. Why not arrange the rolls into a fun Christmas tree and bring it to the school’s Christmas party or to the Christmas coffee break at work?

    Here's how:

      Dissolve the yeast in cold milk and water. Then place all the ingredients in a bread machine. Knead the dough for about 10 minutes on low speed and 2 minutes on medium speed, until the dough is smooth and pulls away from the sides of the bowl. Double the time if you’re kneading the dough by hand. Let the covered dough rise for about 30 minutes.

      Shape the dough into 18 large and 4 small buns and place them on a baking sheet lined with parchment paper. Arrange the buns in the shape of a Christmas tree (depending on the size of the baking sheet). Make sure the buns aren’t too close together, as they will rise and get larger both before and during baking.

      Cover the baking sheet with the buns and let them rise for about 60–90 minutes, or until they have doubled in size. Preheat the oven to 200 °C using standard top and bottom heat.

      Brushing

      Whisk together the eggs, milk, and salt. You can then brush the buns just before baking or immediately after taking them out of the oven while they’re still warm. If you brush them before baking, they’ll turn a dark golden color. If you brush them after taking them out of the oven, the buns will have a lighter color.

      Bake the buns for about 10–15 minutes or until they turn golden brown. Baking time varies depending on the oven and the size of the buns and the Christmas tree.

    • 50 g (1 packet) KronJäst for Sweet Doughs, fresh 
    • 250 g (about 2.5 dl) cold milk
    • 250 g (about 2.5 dl) cold water
    • 1,000 g (about 16.7 dl) all-purpose flour
    • 260 g (about 4.3 dl) powdered sugar
    • 9 g (about 3 tsp) cardamom, ground
    • 3 g (about 1 tsp) ground ginger
    • 3 g (about 1 tsp) ground cinnamon 
    • 1 g (about 0.5 tsp) ground pepper
    • 1 g (about 0.5 tsp) ground cloves
    • 3 g (about 0.5 tsp) salt
    • 200 g butter, at room temperature 

    Brushing

    • 50 g (about 1) 1 egg
    • 45 g (about 3 tbsp) milk
    • 1 krm salt
