Just as the "Rose Bread" gets its name from its resemblance to a rose, here we present an "Easter Bunny Bread." It’s made with the same dough as the Rose Bread, but instead of cutting out a rose, we cut out a cute little Easter bunny. Happy Easter!

    Here's how:

    • 1

Mix the pre-dough until smooth, cover with a lid or plastic wrap, and let it rise for 30 minutes.

    • 2

Measure out the remaining ingredients into a mixing bowl and add the pre-dough.

    • 3

Knead the dough in the machine for 6 minutes on low speed and 3 minutes on high speed until it becomes very elastic.

    • 4

Place the dough in an oiled plastic container or bowl with a lid or plastic wrap.

    • 5

Let it rest for 20 minutes.

    • 6

Turn the dough out onto a floured work surface, and weigh out pieces of 40 g each—about 25 pieces.

Roll the round, nice-looking buns into an egg-shaped bun, cut two "ears" on the top of the bun, and let them rise in the oven with the light on at a maximum temperature of 35 °C for about 30–40 minutes.

Remove the fully proofed loaves, increase the oven temperature to 225 °C, and then gently brush the loaves with beaten egg.

    • 9

Bake for about 5–6 minutes at 225 °C. Let cool under a kitchen towel.
