      Mix the pre-dough until smooth, cover with a lid or plastic wrap, and let it rise for 30 minutes.

      Measure out the remaining ingredients into a mixing bowl and add the pre-dough.

      Knead the dough in the machine for 6 minutes on low speed and 3 minutes on high speed until it becomes very elastic.

      Place the dough in an oiled plastic container or bowl with a lid or plastic wrap.

      Let it rest for 20 minutes.

      Turn the dough out onto a floured work surface, and weigh out pieces of 40 grams each—about 25 pieces.

      Shape the dough into round, even, smooth buns and let them rise in the oven with the light on at a maximum temperature of 35 °C for about 30–40 minutes.

      Remove the fully risen loaves from the oven, increase the oven temperature to 225 °C, and gently brush the loaves with beaten egg and sprinkle with poppy seeds.
