
Ginger and Lime Crackers

Ginger and lime cookies with an incredibly fresh flavor, since both the dough and the sugar sprinkled on top are flavored.
With this basic dough, you can easily bake 7 different kinds of sourdoughcrackers. They’re incredibly delicious and crispy. Perfect for serving on a cookie plate, packing in a picnic basket, or giving as a gift to someone you care about. If you find a favorite flavor, you can, of course, flavor the entire dough with that specific flavor. Just skip dividing the dough into seven pieces and use seven times as much seasoning to flavor it.

Dissolve the yeast in milk and water.

Combine all the ingredients in a food processor—3 minutes on low and 8 minutes on high—or mix by hand for 15 minutes.

Place the dough on a work surface and divide it into 7 pieces(245 g each).

Flavoring – for one stick (245 g)
Take one of the dough portions (245 g), mix in the lime zest and ground ginger, and knead by hand on a baking surface. Let the dough rest for 30 minutes, covered with a baking cloth or plastic wrap.

Roll the dough pieces into baguettes the same length as the baking sheet. Place them on a baking sheet lined with parchment paper. Let them rise for 1.5–2 hours, covered with a kitchen towel or plastic wrap.

Topping – for one skein (245 g)
Mix granulated sugar with lime zest and grated ginger. If the ginger is very wet, you canplace it on a piece of paper towel before mixing it with the sugar. Brush with beaten egg and spread the topping over the entire length.

Bake the sticks at 190 °C for about 12 minutes. Let them cool completely. They can be stored until the next day, but should be covered or wrapped in plastic.

Cut all the pieces into 1.5 cm wide strips. Arrange the strips with a little space between them and dry them in the oven at about 150 °C for about 15 minutes. If they aren't quite dry, let them sit overnight in the turned-off oven with the oven door open.

- 25 g (1/2 packet) KronJäst for Sweet Doughs, fresh
- 150 g (1 bag) KronJäst Whole-Grain Wheat Sourdough
- 875 g (about 14.5 dl) all-purpose wheat flour
- 150 g (about 1.5 dl) milk, lukewarm
- 100 g (about 1 dl) water, lukewarm
- 150 g (about 1.5 dl) granulated sugar
- 150 g butter, softened
- 100 g (about 2) eggs
- 12 g (about 2 teaspoons) salt
- 5 g (about 1 tsp) vanilla extract
Flavored with ginger and lime
For 1/7 of the dough. If you want the same flavor in the entire base dough, multiply the ingredients below by 7.
