    If you like licorice, you should definitely try these wonderful licorice cookies.

    With this basic dough, you can easily bake 7 different kinds of sourdough crackers. They’re incredibly delicious and crispy. Perfect for serving on a cookie plate, packing in a picnic basket, or giving as a gift to someone you care about. If you find a favorite flavor, you can, of course, flavor the entire dough with that specific flavor. Just skip dividing the dough into seven pieces and use seven times as many spices to flavor it.

      Choose your 7 favorite flavor combinations—for tips and inspiration, browse the suggestions above.

      Dissolve the yeast in milk and water.

      Combine all the ingredients in a food processor, mixing for 3 minutes on low and about 8 minutes on high, or mix by hand for 15 minutes.

      Place the dough on a work surface and divide it into 7 pieces (245 g each).

      Flavoring – for one stick (245 g)

      Mix the almond paste loosely with water and 1 teaspoon of licorice powder. Roll out the dough into a rectangle about 20×35 cm and spread the filling over it. Crush 4–5 licorice candies, mix with 0.5 teaspoon of licorice powder, and sprinkle over the filling.

      Roll the dough into a long log and transfer the entire log to a baking sheet lined with parchment paper. Let it rise for 1.5–2 hours, covered with a kitchen towel or plastic wrap.

      Topping – for one skein (245 g)

      Brush with beaten egg and sprinkle the topping over the entire length.

      Bake the strips at 190 °C for about 12 minutes. Let them cool completely. They can be stored until the next day, but should be covered or wrapped in plastic.

      Cut all the pieces into 1.5 cm wide strips. Arrange the strips with a little space between them and dry them in the oven at about 150 °C for about 15 minutes. If they aren't quite dry, let them sit overnight in the turned-off oven with the oven door open.

    Basic Dough

    • 25 g (1/2 packet) KronJäst for Sweet Doughs, fresh
    • 150 g (1 bag) KronJäst Whole-Grain Wheat Sourdough
    • 875 g (about 14.5 dl) all-purpose wheat flour
    • 150 g (about 1.5 dl) milk, lukewarm
    • 100 g (about 1 dl) water, lukewarm
    • 150 g (about 1.5 dl) granulated sugar
    • 150 g butter, softened
    • 100 g (about 2) eggs
    • 12 g (about 2 teaspoons) salt
    • 5 g (about 1 tsp) vanilla extract

     

    Licorice Flavoring

    For 1/7 of the dough. If you want the same flavor in the entire base dough, multiply the ingredients below by 7.

    • about 245 g of starter dough
    • 35 g Odense almond paste
    • 2 tsp water
    • 3 g (about 1.5 tsp) licorice powder
    • 4–5 hard licorice candies with powder 

     

    Topping: Licorice

    For 1/7 of the dough. If you want the same topping for the entire base dough, multiply the ingredients below by 7.

    • 35 g (about 2.5 tbsp) granulated sugar
    • 3 g (about 1 tsp) licorice powder
    • 50 g (about 1) egg
