    Delicious little gluten-free semlor with a lovely cardamom flavor. If you don’t have time to bake them the same day, you can bake them ahead of time and freeze them once they’ve cooled. Just take them out, let them thaw, and warm them in the oven for a few minutes to get that fresh-baked feel. And finally, fill them with almond paste and whipped cream, of course!

    Here's how:

      Dissolve the yeast in milk at about 25 °C, add the psyllium husk, and let it sit for about 10 minutes to allow it to swell. Add the remaining ingredients, but save a little of the flour for last so the batter doesn’t become too thick.

      Blend the batter for a few minutes to incorporate air and ensure it’s thoroughly mixed.

      Let the dough rest for about 30 minutes in the bowl, covered with a cloth or plastic wrap, at room temperature.

      Divide the dough into two parts, then divide each part into 10 pieces and roll them into balls.

      Let it rise on a baking sheet lined with parchment paper, covered with a cloth or plastic wrap, at room temperature for about 1.5–2 hours.

      Preheat the oven to 250 °C. Place the baking sheet in the oven and bake the buns for about 10–12 minutes.

      Let the buns cool. Cut off the top, and fill the bottom half with almond paste and freshly whipped cream. Place the top back on and dust with powdered sugar.

    Ingredients

    • 25 g (1/2 packet) KronJäst for Sweet Doughs, fresh
    • 250 g (about 2.5 dl) milk
    • 10 g (1 tbsp) psyllium husk
    • 70 g (0.5 dl) light syrup
    • 5 g (0.5 tbsp) ground cardamom 
    • 3 g (0.5 tsp) salt
    • 100 g butter, softened 
    • 50 g (1) egg
    • 500 g (about 8 dl) gluten-free flour mix

    Filling

    • 200 g Odense almond paste, mixed with 0.5 dl water—stir in a little water at a time 
    • 300 g (3 dl) whipping cream, whipped with 5 g (1 tsp) granulated sugar

    Don't want almond paste in your semla? Fill it with vanilla cream instead. It's really delicious!

    Garnish

    • 11–22 g (1–2 tbsp) powdered sugar, to dust over the semlor
