Crispy waffles that can be served with whipped cream and fresh berries or simply on their own, as a “coffee treat.” You can easily vary the flavor of the waffles by mixing in ingredients such as cinnamon, cardamom, ginger, coconut, chocolate, or orange into the batter. Enjoy them all year round!

Melt the butter, pour in the milk, and dissolve the yeast. Mix the flour, salt, and vanilla sugar in a bowl. Add the milk mixture while stirring and whisk until smooth. Let rise for about 30 minutes.

Preheat the waffle iron and grease it with a little butter. Pour about 1 dl of waffle batter into the iron at a time and bake the waffles until they are golden brown. Place the finished waffles on a wire rack.

Serve the waffles warm and fresh out of the oven with whipped cream or ice cream and fresh berries.

You can replace some of the wheat flour with a coarser flour. This makes the waffle a little more “substantial” and perfect as a luxurious appetizer served with a dollop of crème fraîche, red onion, shrimp, and roe.
