
French bread made with spelt flour

A delicious breakfast loaf made with spelt, which boosts the bread's protein content. The fact that it's also easy to bake is an added bonus.

Here's how:

Crumble the yeast into a bowl and add water, olive oil, and honey. Add the flour and knead the dough thoroughly for about 10 minutes.

Add the salt and knead the dough for another 5 minutes. Then let it rise for about 1 hour.

Grease two baking pans with olive oil.

Divide the dough into two parts, knead a little, and shape into 2 loaves, then place them in the pans.

Let it rise under a kitchen towel until it doubles in size, about 30 minutes.

Brush the loaves with water and make a slit lengthwise. Bake at 200 °C for about 30 minutes. You can spray a little cold water into the oven after placing the loaves inside to help them develop a better crust.

Let the bread cool on a wire rack.

- 500 g (5 dl) water, lukewarm
- 40 g (2 tsp) honey
- 90 g (1 dl) olive oil
- 40 g (2 tbsp) flaked salt
- 180 g (about 3 dl) spelt flour, sifted
- 720 g (about 12 dl) Manitoba cream flour or special wheat flour
