    Here's how:

      Dissolve the yeast in water (20 °C) in a bowl or dough mixer.

      Add salt, syrup, oil, and flour. Knead the dough until smooth, about 10–12 minutes by hand or 8–9 minutes with a mixer.

      Add the blueberries and knead for 1 minute. Let rise under a kitchen towel for about 1 hour.

      Place the dough on a floured baking surface. Divide the dough into 15 pieces. Shape each piece into a round bun, or roll out the dough to about 1 cm thick and cut out round rings—don’t forget the classic hole in the middle.

      Let the rings rise on a baking sheet lined with parchment paper for about 30 minutes.

      Preheat the oven to 200 °C.

      Bring water to a boil in a large saucepan. Using a slotted spoon, lower the dough rings into the water, 3–4 at a time, and simmer them for about 2 minutes. Let them drain on a wire rack or a clean kitchen towel.

      Place them back on the parchment paper and sprinkle with sesame seeds. Bake in the oven for 15–20 minutes. Let cool on a wire rack without a baking cloth.

      Serve them fresh out of the oven with some delicious sides.

    NOTE: If you make the entire batch but know you won't eat them all, reduce the rising time to 30 minutes, shape them into bagels, and freeze them. Take them out and let them rise again for an additional 30 minutes, then boil and bake them the next time you're ready.

    • 25 g (½) packet of KronJäst for Sweet Doughs, fresh 
    • 150 g (1 bag) KronJäst Whole-Grain Wheat Sourdough
    • 500 g (about 5 dl) water
    • 10 g (about 2 tsp) sea salt
    • 40 g (about 2 tbsp) light syrup
    • 13 g (about 1 tbsp) cooking oil
    • 720 g (about 12 dl) all-purpose flour
    • 3 dl blueberries, fresh or frozen (drained)
    • 32 g (about 4 tablespoons) sesame seeds, white and black

    Topping

    • Serve with cream cheese and lemon curd, or butter and a good aged cheese.
