
Garlic Baguettes

Delicious garlic baguettes with a soft crumb and a wonderful garlic flavor. Perfect with dinner or a tasty soup!
Here's how:

Day 1
Dissolve the yeast in water at 25 °C. Add the flour and mix slowly in a mixer for 2–3 minutes. Double that time if you’re kneading by hand. Let it rest at room temperature overnight in a large bowl covered with plastic wrap.

Day 2
Mix the oil and flour into the mixture from Day 1 and knead for 7 minutes in a stand mixer. Double the time if you’re kneading by hand. Add the salt during the last few minutes and add the garlic during the final kneading cycle. Then let the dough rest for 20 minutes.

Shape into baguettes and place them on a baking sheet lined with parchment paper. Let them rise under a cloth for about 60–90 minutes.

Preheat the oven to 250 °C. Make straight cuts across the entire baguette, add a little butter, and sprinkle with a little flaked salt.

Place the baking sheet in the oven, reduce the heat to 220 °C, and bake for about 20 minutes.

- 50 g (1 packet) KronJäst for Bread, fresh
- 350 g (about 6 dl) all-purpose flour
- 100 g (about 1.5 dl) durum wheat
- 500 g (5 dl) water
Day 2
- 450 g (about 7.5 dl) all-purpose flour
- 15 g (1 tbsp) olive oil
- 18 g (3 tsp) salt
- 1.5 tablespoons garlic, finely chopped
