
Wheat Buns with Summer Berries and White Chocolate

White chocolate and delicious summer berries are both tasty and beautiful to serve. Feel free to vary the berries depending on the season!
Here's how:

Crumble the yeast into a large bowl. Melt the butter and pour in the milk; heat to about 25 °C. Pour the milk mixture into the bowl and stir until the yeast has dissolved. Add sugar, salt, and cardamom.

Add the wheat flour and knead into a smooth dough. Let it rise under a kitchen towel for about 30 minutes.

Knead the dough and divide it into two parts. Shape each part into 12 buns.

Let rise on parchment paper or in muffin tins, covered with a kitchen towel, for about 30 minutes.

Preheat the oven to 225 °C.

Poke a hole in each bun, add a few chocolate chips, and fill with summer berries.

Brush the buns with beaten egg and sprinkle with chocolate chips and sugar pearls to taste.

Bake in the center of the oven for about 6–8 minutes.

Best served slightly warm.

- 50 g (1 packet) KronJäst for Sweet Doughs, fresh
- 150 g (1.5 dl) butter
- 500 g (5 dl) milk
- 200 g (2 dl) granulated sugar
- 3 g (1/2 tsp) salt
- 6 g (2 tsp) ground cardamom
- 840 g (about 14 dl) all-purpose flour

- 200 g Odense white chocolate buttons
- 200–300 g summer berries, such as strawberries, raspberries, and/or blueberries
Topping
- Odense Chocolate Buttons, White
- granulated sugar
Brushing
- eggs, beaten
