
Walnut Bread

Håkan Johansson treats us to a fantastic walnut bread with a lovely sourdough flavor.
Here's how:

Dissolve the yeast in the water.

Mix all the ingredients except the salt and walnuts for 3 minutes on low speed using a stand mixer. Once the dough has come together, increase the speed and continue mixing for about 4 minutes. Double the time if you’re kneading by hand.

Add salt and mix for 3 minutes.

Add the walnuts and stir for about 2 minutes.

Place the dough in an oiled bowl and let it rise, covered with plastic wrap, for 2 hours. Fold the dough after it has risen for one hour.

Carefully place the dough on a floured surface and divide it into two pieces. Shape the pieces into rounds and let them rest for about 10 minutes.

Place the dough in floured baking baskets or on baking cloths. Let it rise for about 2 hours, or until it doubles in size.

Preheat the oven to 250 °C. Turn the bread out onto a clean baking sheet.

Score the bread, place it in the oven, and reduce the temperature to 230 °C.

Bake for about 25–30 minutes.

Remove the bread from the oven and let it cool on a wire rack.

- 12.5 g (1/4 packet) KronJäst for Bread, fresh
- 150 g (1 bag) KronJäst Rye Sourdough
- 250 g (2.5 dl) cold water
- 210 g (about 3.5 dl) all-purpose flour
- 210 g (about 3.5 dl) fine rye flour
- 12 g (2 tsp) salt
- 14 g (1 tsp) honey, liquid
- 100 g (2.5 dl) walnuts
