    A classic. Served on dark bread with a mountain of pink and dark roast beef as a topping, served with Danish remoulade sauce. Spread butter on the slice of bread before adding a large lettuce leaf. You can easily make your own caramelized onions if you don’t want to buy them ready-made.

    Here's how:

      Roast Beef

      Take out the roast beef and let it come to room temperature. Preheat the oven to 125 °C. Rub the meat with salt and pepper. Sear the meat in butter until it has a nice crust. Cook the meat in the oven until the internal temperature reaches a maximum of 55 °C, about 1–1½ hours. Let the meat cool completely. Then slice it thinly. Store in the refrigerator with plastic wrap over the dish.

      Crispy Onion

      Peel the onion and cut it into thin rings. Separate the rings. Heat the oil. Add the onion a little at a time. Cook until the onion is golden brown. Place the onion on paper towels to drain. Season with flaked salt. Store at room temperature, uncovered.

      Danish Remoulade Sauce

      Chop the pickled cucumber, capers, and pickled onions. Mix with the remaining ingredients.

      The Sandwich

      Slice the bread and spread butter on it. Place a lettuce leaf on top, followed by one or more slices of roast beef. Top with 1–2 tablespoons of remoulade sauce and crispy onions. Garnish with a tomato wedge and a little parsley. Serve!

    Ingredients

    Sourdough Bread

    A dark sourdough bread baked withKronJäst Rye Sourdough(recipe).

    • 8 slices of unsweetened sourdough bread (see above)
    • butter for the bread
    • lettuce leaves
    • tomatoes
    • parsley

     Roast Beef

    • about 1 kg of roast beef (roast or sirloin), or buy pre-grilled roast beef from the deli counter
    • 1 tablespoon coarsely crushed or freshly ground black pepper and salt
    • butter for frying

     Crispy Onion

    • 10 yellow onions
    • 2 dl neutral-tasting oil, such as corn or sunflower oil
    • flaked salt

     Danish Remoulade Sauce

    • 1 dl pickled cucumber, finely chopped
    • 1 dl capers, finely chopped
    • 1 dl pickled onions, finely chopped
    • 3 dl good-quality mayonnaise
    • 1 tsp Worcestershire sauce
    • 1 tsp Dijon mustard
    • 1 teaspoon lemon juice
    • 1 tsp curry
    • 1 tsp turmeric
    • salt and pepper
