
Large Cinnamon Bun

Surprise someone with a large cinnamon bun—that way, you’ll get more of that delicious filling. One large bun is just right for four people looking for a snack. Feel free to prepare the bun ahead of time and freeze it. In that case, skip the final rising step. Take it out, let it thaw, and let it rise under plastic wrap; brush with egg and sprinkle with pearl sugar.
Here's how:

Dissolve the yeast in milk at 20 °C. Add the remaining ingredients and knead into a smooth dough for about 10–12 minutes. Double the time if you’re kneading by hand. Let the dough rise under plastic wrap or a kitchen towel for about 30 minutes.

Divide the dough into 2 pieces. Roll out one half of the dough on a floured work surface.

Spread butter on the dough. Sprinkle with sugar and cinnamon.

Cut into 3-cm-wide strips, then roll each strip into a large spiral.

Place them in large pans or on a baking sheet. Repeat with the remaining pieces.

Let the buns rise for about 30 minutes. Meanwhile, preheat the oven to 230 °C.

Brush with egg beaten with a little water. Sprinkle with pearl sugar.

Lower the oven temperature to 200 °C and bake for about 20 minutes.

- 500 g (5 dl) milk
- 840 g (about 14 dl) all-purpose flour
- 110 g (1.25 dl) granulated sugar
- 100 g butter, at room temperature
- 3 g (1/2 tsp) salt
Filling
- 125 g butter
- 180 g (2 dl) granulated sugar
- 24 g (4 tbsp) ground cinnamon
Brushing
- 1 egg, beaten with a little water
