    Here's how:

      Whisk together cold water, milk, yeast, olive oil, freshly squeezed lemon juice, honey, and finely grated lemon zest.

      Finally, add the flour and knead the dough in a mixer for about 5 minutes, or twice as long by hand. Let it rise for 2 hours.

      Place the dough on a floured work surface and knead it.

      Divide the dough into 16 equal pieces and shape them into lemon-shaped buns. Place them on a greased baking sheet.

      Let it rise for 45 minutes under a kitchen towel. Preheat the oven to 225 °C.

      Brush the buns with beaten egg and sprinkle with semolina.

      Spray water into the oven using a flower sprayer. Bake in the center of the oven for 10–12 minutes until they are nicely browned. Let cool before serving.

    • 25 g (1/2 packet) KronJäst for Sweet Doughs, fresh
    • 50 g (5 dl) cold water
    • 100 g (1 dl) milk
    • 13 g (1 tbsp) olive oil
    • 50 g (0.5 dl) lemon juice, freshly squeezed
    • 20 g (1 tbsp) honey
    • 1 tsp finely grated lemon zest
    • 180 g (about 3 dl) durum wheat flour
    • 240 g (about 4 dl) all-purpose flour
    • 9 g (1.5 tsp) salt

    Brushing

    • 1 egg, beaten 

    Garnish

    • 35 g (0.5 dl) semolina
