
Lemon-Licorice Treat

Lemon and licorice are an amazing combination. This licorice bun with lemon will transport you to sunny summer days, and if you used to eat hockey powder when you were little, it’ll take you right back in time!
Here's how:

Dissolve the yeast in the milk and water. Combine all the ingredients and mix in a stand mixer—3 minutes on low and 9 minutes on high—until the dough is elastic and smooth. Double the time if kneading by hand.

Take out the dough and knead it a little by hand, shape it into a ball, place it in a bowl, and cover it with plastic wrap or a kitchen towel. Let it rest for 30 minutes at room temperature.

Divide the dough into two pieces and roll out one piece at a time. Mix the almond paste with butter to form a smooth filling, and spread half of it over the rolled-out dough. Then spread half of the lemon curd over the almond filling.

Roll the dough into a log and cut it into pieces. Place the buns, cut-side up, in molds or on baking sheets lined with parchment paper. Then do the same with the other piece of dough.

Let the buns rise for 50–60 minutes in a turned-off oven with only the light on. If you let them rise at room temperature, expect a rising time of 90–120 minutes.

Remove the buns and let them sit at room temperature; preheat the oven to 240 °C. Brush them with beaten egg and sprinkle licorice sugar over the entire bun. Bake in the middle of the oven for 10 minutes.

- 50 g (1 packet) KronJäst for Sweet Doughs, fresh
- 300 g (3 dl) cold water
- 200 g (2 dl) milk, cold
- 1,125 g (about 18.5 dl) all-purpose flour
- 200 g softened butter
- 200 g (2.2 dl) granulated sugar
- 9 g (1.5 tsp) salt
- 10 g (1 tbsp) cardamom, coarsely ground
- 50 g (1) egg
Filling
- 300 g Odense almond paste
- 150 g butter, softened
- 320 g (1 jar) lemon curd
Brushing
- 1 egg, beaten
Licorice candy
- 150 g (1.7 dl) granulated sugar
- 18 g (3 tbsp) licorice powder
Mix the sugar and licorice powder together. Here’s a tip: pour the sugar and licorice into a plastic bag and shake gently—that makes it easier to mix.
