
Orange and Walnut Bread

A wonderfully fragrant Christmas bread that pairs well with herring, ham, and cheese. Mix in your favorite nuts and give the bread your own creative Christmas shape!
Here's how:

Dissolve the yeast in water (about 25 °C), then add the remaining ingredients except for the salt. Knead for 10 minutes on low speed, add the salt, and knead for another 5 minutes. Double the time if you’re kneading by hand.

Let the dough rest in an oiled pan for 40 minutes, punch it down, let it rest for 30 minutes, punch it down again, and let it rest for 10 minutes.

Divide the dough into 4 portions and shape them into “lemon loaves”—that is, pinch the dough together at the sides, like a lemon. Place them seam-side down and let them rise for 60–75 minutes.

Flour the bread and slice it.

Bake at 250 °C on a baking stone or baking sheet until the bread is nicely browned, about 30 minutes.

- 50 g (1 packet) KronJäst for Bread, fresh
- 150 g (1 bag) KronJäst Whole-Grain Wheat Sourdough
- 500 g (about 5 dl) water
- 500 g (about 10 dl) whole-grain spelt
- 200 g (about 3.2 dl) all-purpose wheat flour
- 5 g (about 1 tablespoon) ground bitter orange
- 2 g (about 1 tsp) ground cinnamon
- 70 g (about 1 dl) walnuts, chopped, or nuts/seeds of your choice
- 15 g (about 3 tsp) sea salt
