    Here's how:

      Crumble the yeast into a mixing bowl and pour in a little water. Stir until the yeast is dissolved.

      Add the rest of the water, the salt, the oat bran, and the oats. Work in most of the flour, either by machine or by hand, until the dough pulls away from the sides of the mixing bowl.

      Sprinkle a thin layer of flour over the dough. Cover with a kitchen towel. Let rise for about 2 hours at room temperature.

      Knead the dough together in the bowl. Then transfer it to a floured work surface and knead in the rest of the flour.

      Divide the dough in half. Shape two slightly oval loaves. Lightly dust the tops with flour. Place them side by side on a greased baking sheet or on parchment paper. Cover with a kitchen towel. Let the loaves rise for about 1 hour. Make a few slits in the loaves with a sharp knife.

      Bake in the lower part of the oven at 275 °C for about 10 minutes. Reduce the heat to 200 °C and bake for another 20 minutes or so.

      Let the bread cool on a wire rack without a baking cloth to preserve the crispy, delicious crust.

    • 50 g (1 packet) KronJäst for Bread, fresh
    • 1,000 g (10 dl) cold water
    • 17 g (1 tbsp) salt, finely ground
    • 45 g (1 dl) rolled oats
    • 70 g (2 dl) high-fiber rolled oats
    • 1320–1380 g (about 22–23 dl) all-purpose flour
