
Country-style sandwich with coleslaw, avocado, and bacon

This sandwich is simple and filling, and can easily be made completely vegetarian if you leave out the bacon. It’s a variation on the classic “BLT” (bacon, lettuce, and tomato). Toast the bread slices or fry them lightly in olive oil before adding the ingredients.

Country-Style Sandwich
Fry the bacon slices until crispy and let them drain on paper towels. Toast the bread slices in olive oil. Slice the avocado and place the slices on the bread. Thinly slice the spring onion and sprinkle it over the avocado. Spoon the coleslaw onto the avocado. Top with bacon, tomato, and alfalfa sprouts. Finally, sprinkle with a little freshly ground black pepper. Serve!

Coleslaw
Peel and julienne the vegetables. Mix together the vinegar, sugar, salt, and oil. Pour the vinaigrette over the vegetables. Let them marinate overnight. The next day, drain off any excess liquid and add mayonnaise to achieve the desired consistency, along with black pepper.

Sourdough Bread
Sourdough bread baked withKronJäst Sourdough Rye(recipe), with 1 dl coarsely chopped olives or sun-dried tomatoes.
Tip! If you want to experiment a little more, you can mix 1 dl of ajvar relish into the batter. This will give the bread a nice reddish color.

- 4 slices of rye sourdough breadwith chopped olives or sun-dried tomatoes
- olive oil for frying the bread
- 2 avocados
- a couple of spring onions
- 5 g (1 tbsp) lemon juice, freshly squeezed
- 2 dl coleslaw
- 8 slices of fried bacon
- 8 tomato slices
- a couple of handfuls of alfalfa sprouts
- black pepper
Coleslaw
- 1 small head of white cabbage
- 3 carrots
- 200 g (2 dl) apple cider vinegar
- 100 g (1 dl) granulated sugar
- 40 g (2 tbsp) flaked salt
- 13 g (1 tbsp) canola oil
- mayonnaise, good quality (recipe)
- black pepper, coarsely ground
