
Sourdough Focaccia with Chickpea Spread and Hummus

A really delicious sourdough sandwich with chickpea hummus.
Here's how:

Rinse and trim the spinach. Heat the oil in a pan, then add the onion and carrots. Cook for 10 minutes. Season with salt, pepper, and chili. Peel and mince the garlic, then stir it in. Pour in the wine and let it reduce until almost all of it has evaporated. Add the sun-dried tomatoes. Add the chickpeas and let simmer for about 10 minutes. Stir in the parsley and lemon juice.

Cut the sourdough focaccia into 8 pieces and split each one in half. Spread hummus on the bread, top with the chickpea mixture, and place the top half back on. Serve!

Sourdough focaccia baked with KronJäst Sourdough Whole-Grain Wheat (recipe), with rosemary and flaked salt.
- 8 pieces of sourdough focaccia
- 400 g fresh spinach
- 0.5 dl olive oil
- 1 red onion, finely chopped
- 2 carrots, finely chopped
- salt and black pepper
- 2 dried chili peppers, crumbled
- 1 clove of garlic
- 0.5 dl white wine
- 2 tablespoons sun-dried tomatoes, chopped
- 250 g canned chickpeas
- 1 dl finely chopped parsley
- 2 tbsp freshly squeezed lemon juice
- 1–2 dl hummus
