
Cardamom Buns with Dark Chocolate and Sea Salt

Here's how:

Crumble the yeast into a large bowl. Melt the margarine and pour in the milk; heat until it’s lukewarm. Pour the milk mixture into the bowl and stir until the yeast has dissolved. Add sugar, salt, and cardamom.

Add the wheat flour and knead into a smooth dough. Let it rise under a kitchen towel for about 30 minutes.

Knead the dough and divide it into two parts. Roll out each part into a rectangle, about 20×40 cm. Spread the filling evenly over the dough, roll it up, and cut 12 buns from each part.

Let rise on parchment paper or in muffin tins, covered with a kitchen towel, for about 30 minutes.

Preheat the oven to 225 °C.

Brush the buns with beaten egg and sprinkle with chocolate chips, pearl sugar, and a little sea salt to taste.

Bake in the center of the oven for about 6–8 minutes, until golden brown.

Best served slightly warm.

- 50 g (1 packet) KronJäst for Sweet Doughs, fresh
- 150 g (1.5 dl) butter
- 500 g (5 dl) milk
- 200 g (2 dl) granulated sugar
- 3 g (½ tsp) salt
- 6 g (2 tsp) ground cardamom
- 840 g (14 dl) all-purpose flour

- 100 g (1 dl) butter
- 60 g (4 tbsp) granulated sugar
- 10 g (1 tbsp) ground cardamom
- 200 g Odense dark chocolate buttons
Topping
- 1 egg, beaten
- Odense Chocolate Buttons, Dark
- granulated sugar
- sea salt
