
Cinnamon Bites

As we all know, a beloved treat has many names and can be varied endlessly—such as cinnamon buns, wheat buns, wheat bread, snails, and cinnamon rolls, etc. You can bake them in molds, in long shapes, as knots, and much more. The only limit is your imagination. Here we present “kanelgömmor,” which can also be adapted—for example, by using almond paste instead of sugar, cinnamon, and vanilla sugar. Choose based on your taste, what you have at home, or your mood.
Here's how:

Dissolve the yeast in the milk.

Add the remaining ingredients and mix in the mixer for about 10 minutes (3 minutes on low and 7 minutes on medium) or 20 minutes by hand until the dough is smooth and elastic.

Cover the bowl with plastic wrap and let it rise for about 30 minutes. Preheat the oven to 210 °C.

Roll out the dough into a rectangle. Spread butter on the dough and sprinkle with sugar, cinnamon, and vanilla sugar. Roll up the dough and cut into buns of the desired size.

Place in muffin tins and let rise on a baking sheet covered with plastic wrap for about 60–90 minutes.

Brush the buns with the egg mixture and sprinkle with pearl sugar.

Bake in the middle of the oven for about 10 minutes.

Ingredients
- 50 g (1 packet) KronJäst for Sweet Doughs, fresh
- 500 g (about 5 dl) milk
- 1,200 g (about 20 dl) all-purpose flour
- 250 g (about 2.5 dl) granulated sugar
- 200 g (about 2 dl) butter
- 9 g (about 1.5 tsp) salt
- 10 g (about 1 tbsp) ground cardamom
Filling
- 200 g (about 2 dl) butter, at room temperature
- 100 g (about 1 dl) granulated sugar
- 10 g (about 1.5 tablespoons) ground cinnamon
- 5 g (about 1 tsp) vanilla sugar
Brushing
- 50 g (about 1) egg, beaten
- 15 g (about 1 tablespoon) water
