    A light bread with a delightful jalapeño kick and a fantastic, well-rounded flavor from the hidden, slightly melted Emmental cheese. Yum.

    Here's how:

      Dissolve the yeast in the water. Mix all the ingredients except the cheese and jalapeños in a mixer for 3 minutes on low and 7 minutes on high. Double the time if you’re kneading by hand. Drain the jalapeños and chop them into coarse pieces. Add the cheese and jalapeños and mix for a few turns on low speed.

      Take the dough out and knead it a little on a floured surface, shape it into a round, and place it in a bowl. Cover with a kitchen towel or plastic wrap and let it rest for 30 minutes.

      Divide the dough into 35 pieces, shape them into round buns, and place them on a baking sheet lined with parchment paper. Cover with a kitchen towel or plastic wrap and let rise for about 50–60 minutes in the oven with only the light on (expect the rising time to double at room temperature).

      Let the buns come to room temperature, then carefully slice them straight across. Preheat the oven to 250 °C.

      When the oven reaches 250 °C, place the loaves in the center of the oven and lower the temperature to 225 °C. Bake for about ten minutes or until the loaves are a nice golden brown.

    • 25 g (1/2 packet) KronJäst for Bread, fresh
    • 400 g (about 4 dl) cold water
    • 720 g (about 12 dl) all-purpose flour
    • 40 g (about 1/2 dl) canola oil
    • 20 g (about 1 tbsp) light syrup
    • 12 g (about 2 teaspoons) salt
    • 150 g (1 jar) jalapeños, coarsely chopped (increase the amount for extra heat, reduce for a milder flavor)
    • Emmental cheese, 150 g, 1×1 cm cubes
