
Lemon and Polenta Buns with Thyme

Delicious buns with a soft texture and a wonderfully fresh taste. Perfect for a picnic or a buffet!
Here's how:

Mix the polenta with the boiling water and let it sit until it becomes porridge-like. Let it cool slightly.

Mix all the ingredients together in the food processor for about 10 minutes. Double the time if you're kneading by hand.

Let it rise for about 45 minutes.

Turn it out onto a floured work surface and cut it into smaller pieces.

Roll out the dough into lemon-shaped buns and dip them in polenta. Place them on a baking sheet.

Let it rise for about 30 minutes. Preheat the oven to 225 °C.

Bake for about 8–10 minutes.

- 50 g (1 packet) KronJäst for Bread, fresh
- 150 g (2 dl) polenta grits
- 500 g (5 dl) boiling water
- 300 g (3 dl) milk
- 170 g (1.8 dl) olive oil
- 2 tbsp thyme, freshly picked
- 1 large lemon, zest grated
- 1,000 g (about 16.7 dl) all-purpose flour
- 17 g (1 tbsp) salt
