    Teff is a type of grass that is naturally gluten-free and very tasty. These rolls are both soft and flavorful. You'll love them, whether you have celiac disease or not!

    Here's how:

      Weigh out the water into a bowl and stir in the yeast. Then weigh out all the other ingredients except the psyllium husk and mix by hand with a whisk, or with an electric mixer, until the batter is smooth.

       Add the fiber husks while whisking, and mix the dough until smooth. At this stage, the dough should be fairly loose. Cover the bowl with plastic wrap and let it rise at room temperature for 10–12 hours.

      Preheat the oven to 250 °C (convection 230 °C).

      Scoop up the rolls with a spoon directly from the bowl, and place them on a baking sheet lined with parchment paper.

      Bake the rolls in the middle of the oven for 15 minutes. Let them cool slightly before slicing them.

    • ½ tsp KronJäst for Bread, dry
    • 400 g (4 dl) water, cold
    • 9 g (1.5 tsp) salt
    • 30 g (about 0.5 dl) cornstarch
    • 10 g (1 tbsp) dark syrup
    • 230 g (about 3.8 dl) teff flour
    • 10 g (1 tbsp) psyllium husk
