
Breakfast croissants with ham and cheese

Delicious breakfast sandwiches filled with ham, cheese, mustard, and mayonnaise. Topped with poppy seeds, which are packed with nutrients like zinc and magnesium!
Here's how:

Melt the butter and add the milk; heat until lukewarm. Crumble the yeast into a bowl and pour the milk mixture over it. Add most of the flour, salt, and honey, and knead into a smooth dough for 2 minutes on low speed and 6 minutes on high speed. Double the time if you’re kneading by hand.

Mix in the rest of the flour. The dough should feel very soft but not sticky. Let it rise for 40 minutes.

Divide the dough into 4 pieces and roll out each piece into a circle. Cut 6 triangles from each circle along the wide side of the dough, as if you were cutting slices of cake.

Add a slice of ham, some cheese, and 1 teaspoon of the mustard-mayonnaise mixture to the wide end of each triangle. Roll them up toward the tip of the triangle. Then let them rise for another hour.

Brush the croissants with beaten egg and sprinkle with poppy seeds.

Bake at 250 ºC (convection oven) for about 10–12 minutes

- 50 g (1 packet) KronJäst for Bread, fresh
- 500 g (5 dl) milk, lukewarm
- 60 g (about 1 dl) barley flour
- 720 g (about 12 dl) all-purpose flour
- 50 g (0.5 dl) butter
- 15 g (2 tsp) salt
- 20 g (1 tbsp) honey
- 16 g (2 tbsp) poppy seeds
Filling
- 200 g ham, smoked or boiled
- 100 g cheese
- 2 tablespoons mustard, mixed with 2 tablespoons mayonnaise
Topping
- poppy seeds
Brushing
- 1 egg, beaten
