
Rich Malt Bread

A classic Christmas bread. Lots of exciting ingredients that come together to fill the house with a wonderful Christmas scent!
Here's how:

Dissolve the yeast in a little water.

Add the remaining ingredients, except for the raisins.

Mix the dough in a stand mixer for 4 minutes on low speed and 2 minutes on medium speed, or by hand for 15 minutes, until it becomes smooth.

Add the raisins. Just mix them into the dough.

Cover with plastic wrap and let rise for about 30 minutes.

Preheat the oven to 230 °C. At the same time, place a pan with 0.5 L of water on the bottom rack of the oven and leave it there for the entire baking time.

Shape into two loaves and place them in the greased pans. Cover with plastic wrap and let rise for about 60 minutes.

Place the loaves in the center of the oven and lower the temperature to 190 °C. Bake for about 28–30 minutes.

Remove the bread from the pan immediately after baking. Let it cool on a wire rack.

- 50 g (1 packet) KronJäst for Bread, fresh
- 500 g (5 dl) low-calorie soda
- 70 g (0.7 dl) water
- 140 g (1 dl) dark syrup
- 30 g (2 tbsp) butter, at room temperature
- 250 g (4 dl) rye flour
- 800 g (about 13 dl) all-purpose flour
- 12 g (2 tsp) salt
- 5 g (1 tbsp) ground ginger
- 5 g (1 tbsp) ground bitter orange
- 5 g (1 tbsp) ground cinnamon
- 5 g (1 tbsp) ground cloves
- 100 g (1.5 dl) raisins
