    This recipe is inspired by Greek flavors, featuring feta cheese, herbs, and garlic. The best thing to do is to really, really work the herb mixture into the dough with your fingers, digging deep. It’s both wonderful and fun!

    Here's how:

      Dissolve the yeast in lukewarm water. Then add the olive oil and honey.

      Add the wheat flour and salt. Knead into a smooth dough for about 15 minutes in a stand mixer or 25 minutes by hand.

      Let the dough rise under a kitchen towel until it doubles in size, for at least 40 minutes.

      Grease a baking sheet well with olive oil. Pour in the dough. Stretch and shape the dough into a rectangle. Let it rise under a kitchen towel for another 30 minutes.

      Preheat the oven to 225 °C on the convection setting.

      In the meantime, make the herb oil. Mix half of the oil, herbs, and flaked salt thoroughly in a mortar. Add the rest of the oil.

      Use your fingers to poke lots of holes in the dough. Pour in the herb oil and work it thoroughly into the dough. Crumble the feta cheese into the dough and sprinkle the olives on top, pressing everything into the dough.

      Bake in the middle of the oven for about 15 minutes, until the bread is golden brown. Let it cool slightly.

    • 25 g (1/2 packet) KronJäst for Bread, fresh
    • 300 g (3 dl) lukewarm water (37 °C)
    • 45 g (1/2 dl) olive oil
    • 40 g (2 tbsp) honey
    • 480 g (about 7 dl) all-purpose flour
    • 6 g (1 tsp) salt

    Herbal Oil

    • 1 1/2 dl olive oil
    • 2 dl coarsely chopped fresh herbs, such as basil, rosemary, etc.
    • 2 tsp flaked salt

    Topping

    • 150 g feta cheese, in chunks
    • 1 dl pitted black olives
