    A classic semla is always a hit, but it’s also great to mix things up with different flavors and toppings. Like this dreamy version with chocolate and orange!

    Here's how:

      Warm the milk until it is lukewarm.

      Crumble the yeast into a bowl. Stir it into the milk. Add the rest of the ingredients.

      Combine all the ingredients and mix in a stand mixer—3 minutes on low and 10 minutes on high—until the dough is elastic and smooth. Double the time if you’re kneading by hand. Let it rest at room temperature for 30 minutes.

      Filling: Grate the almond paste. Chop the chocolate. Heat the orange juice and orange zest until it simmers. Stir in the grated almond paste and chopped chocolate. Stir until smooth. Transfer to a piping bag, if desired. Let stand in the refrigerator for 1 hour.

      Preheat the oven to 200 °C. Bake the buns in the center of the oven for 10–12 minutes until they feel light and fluffy.

      Cut off the top of each bun. Make a small indentation. Pipe or spoon in the filling.

      Whip the cream and spoon it onto the semlor. Place the tops on and dust with powdered sugar and cocoa.

    Ingredients

    • 50 g (1 packet) KronJäst for Sweet Doughs, fresh
    • 250 g (2.5 dl) milk
    • 28 g (4.5 tbsp) cocoa
    • 140 g (1 dl) white syrup
    • 2 g (1/4 tsp) salt
    • 100 g butter, at room temperature 
    • 3 g (1 tsp) ground cardamom 
    • 500 g (about 8.5 dl) wheat flour

     

    Filling

    It's a good idea to prepare the filling the day before and let it sit in the refrigerator overnight.

    • 100 g (1 1/4 dl) Odense dark chocolate, chopped, or Odense dark chocolate buttons
    • 250 g Odense almond paste, grated 
    • 100 g (1 dl) orange juice
    • 1 orange, finely grated zest
    • 600 g (6 dl) whipping cream

    Garnish

    • powdered sugar
    • cocoa
