A fun way to serve cinnamon buns that isn't too difficult. I let the buns rise in cookie tins, which I then removed before placing them on a stick. You have to be a little careful when baking them so they don’t burn. It’s easy for them to burn since they’re much smaller than regular cinnamon buns. If you like, you can sprinkle them with colored sugar pearls. They’re perfect for kids’ parties.

Here's how:

Crumble the yeast into a mixing bowl, then pour the cream milk (20 °C) over the yeast. Stir until the yeast has dissolved.

Stir in the sugar, cardamom, egg yolk, butter, and most of the flour.

Mix for a while in a stand mixer, then add the salt. Continue kneading the dough until it’s smooth. Let the dough rise for about 30–40 minutes.

Roll out the dough into a rectangular sheet on a floured baking surface, then cut it into squares about 15×15 cm. Spread butter on the squares, and sprinkle sugar and cinnamon over them.

Roll each sheet into a “swiss roll-like roll.” Cut into smaller pieces and place them in paper liners, if desired. Let the buns rise for about 20–30 minutes.

Brush with beaten egg and sprinkle with a little pearl sugar. Bake in the center of the oven at 200 °C for 8–10 minutes, or until the buns are golden brown. Let cool on a wire rack.

Remove the buns from the molds and place them on a small wooden skewer or something similar—the kind used for cake pops.

Bull-pops taste best when eaten the same day they're baked (since they tend to get a little dry in the days that follow). They're great for freezing. Put them on sticks once they've thawed.
Tip!
One tip might be to double the recipe and use half the dough to make regular-sized buns and the other half to make bun pops.

- 25 g (1/2 packet) KronJäst for Sweet Doughs, fresh
- 75 g (0.75 dl) butter, at room temperature
- 250 g (2.5 dl) cream milk, 1/2 whipping cream, 1/2 milk
- 6 g (1 tsp) salt
- 50 g (0.5 dl) sugar
- 2 g (0.5 tsp) cardamom, freshly ground
- 1 egg yolk
- 360–420 g (about 6–7 dl) all-purpose flour
