    Bake-off buns with mixed seeds, hazelnuts, goji berries, and apricots.

    Here's how:

      Toast the nuts in a dry, hot skillet. Rub off the skins with a dry kitchen towel. Chop them coarsely. Then cut the apricots into small cubes.

      Crumble the yeast into a bowl. Pour in the water and stir in the yeast. Add the oil, nuts, apricots, goji berries, seeds, and almost all of the flour.

      Knead the dough thoroughly for about 5 minutes. Let it rise, covered, for about 30 minutes.

      Place the dough on a floured work surface and knead thoroughly. Divide the dough into 15 pieces and shape them into buns. Place them on a baking sheet lined with parchment paper.

      Cover with plastic wrap and let rise for about 30 minutes.

      Place the baking sheet in the freezer immediately after proofing and freeze it.

      Preheat the oven to 250 °C. Bake the frozen bread in the center of the oven for about 15 minutes.

    • 50 g (1 packet) KronJäst for Bread, fresh
    • 300 g (about 3 dl) water, 20 °C
    • 50 g (0.5 dl) hazelnuts
    • 50 g (0.5 dl) dried apricots, soft 
    • 26 g (2 tbsp) canola oil
    • 60 g (1 dl) goji berries
    • 6 g (1 tsp) salt
    • 480 g (about 8 dl) sifted flour + a little extra for rolling out the dough
    • 70 g (1 dl) mixed seeds, such as sunflower, flax, and sesame seeds
