    Is it a bagel? Is it a lussekatt? No… it’s a bagel cat! A fun alternative to Advent coffee and Christmas breakfast. Serve with kimchi spread for an extra kick.

    Here's how:

      Crumble the yeast and dissolve it in the cold water. Add the remaining ingredients. Knead with a stand mixer for 2 minutes on low speed and 12 minutes on high speed, until the dough is smooth and elastic. Double the time if you’re kneading by hand.

      Place the dough on a floured work surface and knead it into a round shape. Cover the dough with plastic wrap and let it rest for about 30 minutes.

      Divide the dough into 40 pieces and roll them into logs about 10 cm long. To prevent the dough from drying out while rolling, cover the rolled-out logs with plastic wrap.

      Roll it out a little at a time, from the inside out, into a long sausage shape. Twist the ends in opposite directions to form an S shape.

      Dip the bagel cats in beaten egg and then in sesame seeds. Place them on baking sheets lined with parchment paper.

      Let the bread rise in a turned-off oven with only the light on for 50–60 minutes.

      Preheat the oven to 180 °C. Bake the bread for about 5 minutes, then increase the temperature to 250 °C. Bake for another 5 minutes (until the bread is nicely browned).

      Let the bagel cats cool on a wire rack before enjoying them! Feel free to serve them with kimchi dip.

    • 25 g (½ packet) KronJäst for Sweet Doughs, fresh
    • 1,050 g (about 19 dl) all-purpose wheat flour
    • 50 g (1/2 dl) light syrup
    • 500 g (5 dl) water, cold
    • 20 g (1/4 dl) canola oil
    • 20 g (3.5 tsp) salt

    Brushing

    • 2 eggs, beaten
    • 100 g Risberg Roasted or Chili-Roasted Sesame Seeds
