    Here's how:

    • 1

Crumble the yeast into a bowl and add water (20 °C), syrup, salt, and cinnamon.

    • 2

Mix in the rye flour and a little wheat flour at a time, and knead the dough slowly in a bread machine until it is elastic.

    • 3

Knead the dough a little more vigorously for about 5 minutes, then stir in the nuts and fruit.

    • 4

Let the dough rise until it doubles in size under a kitchen towel. It takes about an hour.

    • 5

Place an empty baking sheet on the bottom rack of the oven and preheat the oven to 250 °C.

    • 6

Fold the dough a few times, shape it into a loaf, and place it in a greased bread pan.

    • 7

Let it rise for another 1 hour, covered with a baking cloth.

    • 8

Carefully make 3 lengthwise cuts in the bread with a sharp knife and place it in the oven. Pour 3/4 of a coffee cup of water into the hot baking sheet and quickly close the oven door. Lower the temperature to 230 °C and bake for about 30 minutes.
