
Wort Bread with Porter and Cider

Delicious wort bread is a Christmas tradition. It turns out especially flavorful and festive when baked with Christmas soda and porter.
Here's how:

Crumble the yeast into a bowl or stand mixer. Add room-temperature porter and julmust, and stir until the yeast has dissolved.

Mix in the butter, oil, dark syrup, spices, and salt, as well as almost all of the flour.

Add the remaining flour, a little at a time. Knead the dough for about 5 minutes; it’s okay if it’s a little sticky. Double the time if you’re kneading by hand.

Let it rise under a kitchen towel for about 60 minutes.

Place the dough on a floured work surface and divide it into 2 equal parts.

Shape the dough into 2 long loaves, then divide each one into 10 smaller loaves.

Preheat the oven to 220 °C convection (about 240 °C in a conventional oven).

Place the 20 mini rolls on 2 baking sheets and let them rise under a baking cloth for about 25 minutes.

Slice the bread with a sharp knife and sprinkle a little flour on top.

Bake the trays at the same time in the oven (if using a convection oven) for about 15 minutes until they are thoroughly baked; the recommended internal temperature is 96–98 °C.

Let it cool on a wire rack covered with a kitchen towel.

- 50 g (1 packet) KronJäst for Bread, fresh
- 410 g (4.1 dl) porter, at room temperature
- 240 g (2.4 dl) julmust, at room temperature
- 50 g butter, at room temperature
- 7 g (1 tbsp) oil, with a neutral flavor
- 250 g (1.5 dl) dark syrup
- 3 g (1.5 tsp) ground bitter orange zest
- 3 g (1.5 tsp) ground ginger
- 3 g (1.5 tsp) ground cloves
- 3 g (1 tsp) ground cardamom
- 6 g (1.5 tsp) salt
- 660 g (about 10 dl) rye flour
- 240 g (about 4 dl) all-purpose flour
