
Wheat Buns with Cinnamon and Butter Filling

A beloved treat has many names: cinnamon buns, cinnamon rolls, cinnamon swirls, or simply wheat buns or wheat bread. It’s also called “coffee bread” because it goes so well with coffee. But most people actually prefer to drink a large glass of cold milk with this Swedish classic.
Here's how:

Crumble the yeast into a mixing bowl.

Melt the cooking fat, add the milk, and let it cool to 20–25 °C.

Dissolve the yeast in a little of the dough liquid, then add the rest.

Add the remaining ingredients and stir. Feel free to use an electric mixer with dough hooks or a stand mixer to incorporate all the flour into the dough, about 10 minutes. The dough should be soft and smooth.

Let it rise for 30 minutes, covered.

Make the filling. Mix together the butter, sugar, and cinnamon.

Roll out the dough into a rectangular sheet, about 20×50 cm.

Spread the filling and roll it up. Cut into slices about 1.5 cm thick and place them in muffin tins with the cut side facing up.

Let it rise for about 30 minutes.

Beat the egg with a regular whisk and gently brush it onto the buns. Don't press too hard!

Sprinkle with pearl sugar and, if desired, slivered almonds.

Bake in the center of the oven at 225 °C for 8–10 minutes, or in a convection oven at 200 °C for 10–12 minutes, until the buns are a nice golden brown.

- 50 g (1 packet) KronJäst for Sweet Doughs, fresh
- 100 g (1 dl) butter
- 250 g (2.5 dl) milk
- 50 g (0.5 dl) granulated sugar
- 6 g (1 tsp) salt
- 6 g (1 tsp) cardamom, ground
- 420 g (about 7 dl) all-purpose flour
Filling
- 75 g butter, at room temperature
- 50 g (0.5 dl) granulated sugar
- 10 g (1 tbsp) ground cinnamon
Brushing
- 1 egg, beaten
Garnish
- granulated sugar
- optional: almonds, slivered
