
Saffron Buns with Filling

Of course, adding almond paste, sugar, and cardamom makes them extra luxurious and delicious. They’re perfect for a St. Lucia’s Day celebration, a Christmas party, or a simple yet special cozy evening at home. A good basic dough allows for many variations of these golden treats.

Here's how:

Melt the butter, stir in the milk, salt, sugar, cardamom, and saffron, and let it cool to 20 °C.

Crumble the yeast into the mixing bowl and pour a little of the dough liquid over it. Stir until the yeast has dissolved.

Pour in the remaining dough liquid and one egg. Add most of the flour and knead into a smooth dough—it’s better to be a little sticky than too crumbly. Let it rise for about 45 minutes.

Take out the dough and knead it until smooth, roll it into round buns, and let them rise for another 40 minutes. Mix together the filling.

Make a small indentation in the center of each bun and spoon or pipe in a dollop of the almond filling. Brush with egg and sprinkle with a little pearl sugar.

Bake at 250 °C for about 8 minutes.

- 150 g (1.5 dl) butter
- 500 g (5 dl) milk
- 3 g (0.5 tsp) salt
- 100 g (1 dl) granulated sugar
- 0.5 g (1 packet) saffron
- 6 g (2 tsp) ground cardamom
- 840 g (about 14 dl) all-purpose flour
- 50 g (1) egg
Filling
- 100 g (1 dl) butter
- 75 g (1 dl) almond paste, finely grated
- 15 g (1 tbsp) raw sugar
- 15 g (1 tbsp) granulated sugar
- 6 g (2 tsp) ground cardamom
Brushing
- 1 egg, beaten
