    A hearty take on the classic goat cheese and beet salad. This is a truly delicious sandwich that’s great any time of year, but be sure to enjoy it during the summer while the beets are small and tender.

    Here's how:

      Onion Jam

      Peel the onions and slice them thinly. Sauté the onions in oil over low heat until soft, without letting them brown, about 10 minutes. Add the vinegar and honey, and simmer until almost all the liquid has been absorbed. Season with salt and pepper to taste.

      Sandwich

      Wash the beets, but don’t cut off all the greens, because then the color will “bleed” into the water. Boil them with the skin on until they’re done; the cooking time depends on their size. Peel the beets by rubbing the skin off with your fingers under running water. Cut the beets into wedges or thin slices.

      Preheat the oven to 200 °C. Place the bread slices on a baking sheet lined with parchment paper. Butter the bread slices and spread the beets over them. Cut the cheese into small pieces and place them on top of the beets.

      Bake the sandwiches in the middle of the oven until the cheese begins to melt and turns a golden brown, about 5–7 minutes. Remove the sandwiches from the oven, top with the onion marmalade, and garnish with capers. Serve!

    Sourdough Bread

    This deliciously crispy bread is baked withKronJäst Rye Sourdough(recipe). Shape the dough into a large oval loaf.

    The bread can be flavored with, for example, 2 teaspoons of whole cumin seeds, 2 teaspoons of whole fennel seeds, 1 tablespoon of finely ground bitter orange peel, or 1–2 tablespoons of pre-mixed bread spices.

    • 4 fairly thick slices of sourdough bread, flavored with seeds of your choice. 
    • about 8 beets
    • about 3–4 tablespoons of butter, for the bread
    • 200–300 g goat cheese, in a log
    • 1 dl capers
    • black pepper

    Onion Jam

    • 2 red onions
    • ½ dl olive oil
    • 1 dl balsamic vinegar
    • 4 tablespoons of honey
    • a pinch of flaked salt
    • freshly ground black pepper
