    The tartness of the lemon and the warm, mellow flavor of the canola oil pair perfectly with honey—try it with cream cheese and thinly sliced pears as a topping!

    Here's how:

      Dissolve the yeast and canola oil in water at 20 °C.

      Add the wheat flour, honey, and thyme, and knead the dough for 20 minutes by hand, or 14 minutes in a stand mixer.

      Add the salt, grated lemon zest, and lemon pulp, and knead the dough for another 2 minutes or so.

      Let the dough rest for 50 minutes.

      Turn the dough out onto a floured work surface, divide it, and shape it as desired.

      Place in a greased pan or on a sheet of parchment paper, drizzle generously with canola oil, and press a little thyme into the dough using your fingertips. Let rise for 30 minutes.

      Preheat the oven to 225 °C.

      Bake the bread for about 15–20 minutes until it reaches an internal temperature of 98°C. Remove from the oven and place on a cooling rack.

    • 25 g (1/2 packet) KronJäst Organic, fresh
    • 200 g (about 2 dl) water
    • 300 g (about 5 dl) wheat flour
    • 52 g (about 4 tbsp) canola oil
    • 20 g (about 1 tbsp) honey
    • 3 tablespoons fresh thyme
    • 12 g (about 2 tsp) sea salt
    • 1 lemon, grated and the flesh removed

    Garnish

    • canola oil
    • 1 dl fresh thyme
